Raw Vegan Orange and Oatmeal Scones- Easy + Healthy Raw Vegan Snack

 






Being vegan does not mean you have to miss out on all the delicious, mouth-watering snacks. You can still enjoy scrummy snacks, desserts, and other dishes. These melt in the mouth orange-cranberry and oatmeal scones are perfect as a snack, a dessert, and for breakfast. You can also throw them in a zip lock bag and carry them as a snack when you go out, or for work.

Here is what you need to make these delicious bites

1 ½ cups oat groats soaked overnight and drained

¾ cup soft Medjool dates

1 teaspoon grated orange zest

½ cup walnuts soaked for 6-8 hours, dehydrated and chopped

Method

Step 1: Put the drained oat groats into a food processor and process them until they start to stick together.

Step 2: Put the dates into the food processor with the oats, process again until the mixture becomes a dough.

Step 3: Put the mixture into a large mixing bowl and add the cranberries and walnuts. Mix everything together with your hands.

Step 4: Put the mixture on a flat surface and roll and press into a large circle. You want it to be a about 1 inch in thickness. Cut into triangular pieces and set aside.

Step 5: Put the wedges on to mesh dehydrator trays and set your dehydrator to 110 degrees Fahrenheit. Leave them in the dehydrator for up to six hours, until they go golden brown. If you do not have a dehydrator you can use your oven. Set your fan oven to 80 degrees Fahrenheit and leave the door open.

Note: Oats are excellent for fiber intake, as they are a great source of soluble fiber. This helps with digestion and bloating. They have also been known to help to lower cholesterol levels, as well as boost the immune system. If you need to eat gluten-free then you can purchase gluten-free oat groats from a health food store. You can keep these scones for up to 7 days in an airtight container or zip lock bag.
