Delicious Raw Vegan Carrot Falafel Recipe -Easy and Healthy

If you love the satisfying taste of freshly made falafel or onion bhagi, then you will love this delicious raw vegan alternative. If you are a raw vegan and you struggle to find satisfying recipes to fill you up and eliminate your comfort food cravings, then you should try this recipe. These carrot falafel are not healthy but they are very tasty. You will not even know you are eating something so healthy! This is an excellent way for you to get more vegetables into your diet, especially if you do not live a vegan lifestyle. You will also be pleased to know that all the leftover pulp from making carrot juice can be put to good use with this recipe.

Ingredients

2 cups carrot juice pulp

1 cup sesame seeds, ground up very fine using a spice mill or coffee grinder

2 tablespoons ground flaxseeds

1 tablespoon olive oil

1 celery stick, finely chopped

1/cup basil

1 clove garlic, minced

1 white onion, minced

1 tsp curry powder (optional)

Put all the ingredients into a large bowl and mix together until everything is combined. It should look almost doughy in texture. You should be able to make them into little balls and flatten them to resemble falafel. Once you have formed them, place them in a dehydrator on 110 degrees Fahrenheit for 2 hours. Flip them halfway through, they should be crispy on the outside and soft on the inside.

These tasty bites are perfect with raw vegan hummus, especially as a cinema snack or as a snack or side dish at any time of the day.

Note: If you do not have a dehydrator, you can put them in your oven on the same temperature. Leave the door open to allow air into the oven and to make sure they do not get too dry.
